Thumbprint cookies are a favorite around the Holidays and these chocolate thumbprints are no exception. These cookies have a "crunch" to them but have a fudge-like chew. Balancing these chocolate cookies is a sweet and soft marshmallow creme filling.

Marshmallow Creme Filling

Who doesn't love a delicious marshmallow creme?! How about in a cookie?! Making this marshmallow creme is easy to make and it makes more than enough needed to fill 24 cookies. It's a good thing too, you'll be licking the spoon!

Chocolate Thumbprint Holiday Cookies

This recipe yields roughly 24 cookies - making them great for class parties for the little ones! They also make a great addition to any other function that you may need to bring cookies for.

Chocolate Drizzle

These cookies are drizzled with a homemade chocolate drizzle. It's easy to make and extras store great in the refrigerator! To make the chocolate drizzle, you will need:

  • ¾ cup semisweet chocolate chips
  • 1 tablespoon unsalted butter
  • 2 ½ tablespoon of half & half
  • ½ cup confectioner's sugar
  • ¼ teaspoon vanilla extract

In a small saucepan, melt the unsalted butter and stir in the chocolate chips. Allow the chocolate chips to melt and add the half & half. Once the ingredients have blended well, remove from the heat and stir in the confectioner's sugar, breaking up any bits of powdered sugar that remains. Stir in the vanilla extract and allow the sauce to cool down before drizzling on the cookies.

Piping chocolate drizzle makes drizzling the chocolate easier than using a fork or spoon. It's certainly doable to use utensils but using piping bottles makes the process even easier!

The homemade chocolate drizzle can be stored in the refrigerator for up to 1 week. This drizzle is made using half & half which reduces it's shelf-life.

Ingredients

  • 2 sticks butter, unsalted, softened
  • 1 egg
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 ½ teaspoon vanilla extract
  • ½ cup cocoa powder
  • 1 teaspoon salt
  • 2 cups all purpose flour
  • ½ teaspoon baking soda

Marshmallow Creme Filling

  • ¼ cup unsalted butter
  • 1 ½ cup of marshmallow fluff
  • 2 teaspoon hot water
  • 1 cup confectioner's sugar
  • ¼ teaspoon vanilla extract
  • ⅛ teaspoon salt

Instructions

Chocolate Thumbprint Cookies

  1. Preheat oven to 350°
  2. Sift together the flour, baking soda, cocoa powder, and salt. Set aside.
  3. In a large bowl, beat together the softened butter and the sugars.
  4. Beat in the vanilla extract and the egg.
  5. Slowly beat in the cocoa and flour mixture into the wet ingredients. Blend well.
  6. Roll into tablespoon-sized balls and place onto a cookie sheet.
  7. Using the stick end of a wooden spoon or your thumb, gently press holes into the center of the balls.
  8. Bake in the preheated oven for 7-8 minutes.
  9. Allow cooling before filling.

Marshmallow Creme Filling

  1. Heat a small saucepan on low heat and add the salt to the water and allow the salt to dissolve.
  2. Melt the butter in the saucepan and remove from heat.
  3. Stir in the vanilla, marshmallow fluff, and the confectioner's sugar.
  4. Allow the filling to chill in the refrigerator for about 15-20 minutes before using a small spoon to fill the thumbprints.
