It takes two cookie doughs to make these matcha brookies - one cookie dough is rich in chocolate flavor and the other cookie dough is made with flavorful matcha powder. Both doughs create a fudgy texture.
For the brownie dough:
- Semi-sweet chocolate chips
- Unsalted butter
- All-purpose flour
- Dutch-processed cocoa powder
- Instant coffee

How to Make Matcha Brookies
Preheat the oven - Preheat the oven to 350Fº and line 2 cookies sheets with parchment paper.
The first step is to make the two separate cookie doughs.
To make the brownie cookie dough:
Melt the chocolate - Place the chocolate chips and butter in a bowl, and melt in a double boiler, or microwave (microwaving 20 seconds at a time until completely melted).

Combine the wet and dry ingredients - Add the flour mixture and fold with a rubber spatula until just combined.
Put brownie dough in the refrigerator while you work on the chocolate chip cookie dough.

To make the matcha cookie dough:
Combine the dry ingredients - Whisk together all-purpose flour, matcha powder, kosher salt, and baking soda in a medium bowl to combine.
Combine the wet ingredients- Place the softened butter, brown sugar, and granulated sugar in a large bowl (or bowl of a stand mixer). Beat at medium speed until light and fluffy.
Add egg and vanilla and beat until combined
Combine the wet and dry ingredients - Add the flour mixture and beat on low speed until just combined
How to Make Brookies
Divide the matcha cookie dough - Scoop out matcha cookie dough into 18 portions, and place 3 inches apart on cookie sheets.
Divide the brownie cookie dough - Repeat with chilled brownie dough, setting each scoop next to a matcha scoop.
Roll the cookie doughs together - Quickly roll each combined scoop into a ball with your hands, and place it back onto the cookie sheet seam side up to ensure that both brownie dough and cookie dough can be seen, flattening slightly.
Bake - Bake for 12-14 minutes until the edges are just turning golden, and the center still looks a little underdone.
