Strawberry Cookies Directions
Preheat the oven – Preheat the oven to 375ºF and line two cookie sheets with parchment paper. Parchment paper helps the cookies from spreading and is great for easy and quick cleanup!
Prepare the Strawberry Cookie Mix- Add the vegetable oil to a bowl and beat in the eggs until the mixture is creamy. Sprinkle in the all-purpose flour as well as the strawberry cake mix and add in the tablespoon of milk. Mix the batter until a cookie dough forms.
Chill the cookie dough- Chilling the dough is an important step for the success of this cookie. Without chilling, the cookie will spread while baking, and the chocolates that are pressed into the center will not nestle down into the center of the cookies and instead sit on top of them.
Chill the cookie dough in the refrigerator for at least 1 hour or half of that time in the freezer.

Tip: Use a small cookie scoop (#30) to get the same size cookies. Roll the cookies into balls and then roll into sugar before chilling to reduce the handling time before baking.
Bake the strawberry cookies- Place the cookie balls that have been rolled in granulated sugar on the cookie sheet that has been lined with parchment paper. Only bake one cookie sheet at a time. Return the unused cookie balls back to the refrigerator.
Bake the cookies in the preheated oven for 8 to 10 minutes before removing them from the oven.
Press the chocolate into the center- Remove the cookies from the oven and press a chocolate into the center of each cookie. Be careful not to move the chocolate around as it will melt as it is moved and may disfigure the heart shape.
Allow the cookies to cool completely before transferring them to a container for storage. This may take a while as it will take a bit of the chocolate candies to reharden and not smudge.
